NBD for linux. A homegrown iSCSI-like concept (network block disk). Also, rdiff-backup looks to be exactly what I was looking for - some smarts on top of rsync/ssh for remote incremental backups. Might be more useful than my current dumps piped via ssh to a remote host.
Also discovered Robocopy, which is a sorta-like-rsync program for Windows.
